Chocolate-Almond No Bake Cookies

Chocolate covered almonds are a favorite treat in our house. It’s a great flavor combination that transferred perfectly into these cookies. Everyone in my house loves ’em. And ‘no bakes’ are a great way for kids to help ‘make’ dessert too.  So go ahead, indulge… you can even eat the batter! (or the kids rather)

Makes 24 cookies

As organic as you can:

½ cup non-salted butter (1 stick)

2 cups sugar

3 Tbsp cocoa powder

½ cup milk

¾ cup almond butter

1 tsp vanilla

½ tsp almond extract

3 cups oats

½ cup almond slivers

In a heavy-bottomed saucepan bring butter, sugar, cocoa and milk to a boil. Let boil for 2 minutes. Remove from heat and add almond butter, vanilla and almond extract, stir. When almond butter has melted completely and chocolate sauce is smooth and velvety, add oats and almond slivers. Stir until combined. While still warm and pliable, use a tablespoon and drop mounds of batter onto parchment or waxed paper. No need for perfection! (Side note: kids of all ages love this part!) When the cookies have cooled and hardened transfer them to a platter or dish of choice. Happy eating!
