Pantry Black Bean & Sausage Soup

Sometimes you have to rely on what you’ve got. It was one of those times, when this soup was born. Then my family asked for it again. And again. Et Voilà, a family recipe! All you need is a chilly evening, hungry people and a good loaf of crusty bread. There are few ingredients, so quality matters. (Get good Kielbasa! Use good stock!) Honestly, it’s almost embarrassingly easy, but if my family loves it this much, well then:

As organic as possible:

2 1/2 cups Chicken stock

2 Kielbasa sausages, about 12 oz each

4 – 15 oz. cans Black beans, rinsed and drained

1/2 tsp dried Onion

1/2 tsp granulated Garlic

1/8 tsp Cayenne pepper

1/4 tsp dried Thyme

1 Bay Leaf

Rinse and drain your beans. Set aside.

Cut the Kielbasa into bite sized pieces.

Add the stock, spices, dried herbs, beans and Kielbasa to a pot. Stir.

Simmer for about 25 minutes, until the flavors are married. Taste for seasoning, add more salt or pepper as you’d prefer. Serve with crusty bread.

  1. Even though you are showing in my followed list you don’t seem to be popping up in my reader. This makes me sad. So I will ask Mr WordPress what is going on. However, this soup makes me very very happy …. it was only when I arrived here that I discovered the joys of both Kielbasa and black beans and now you’ve married them in marvellous soup. I will be making this and singing as I do! Thank you and now I’m off to catch up on all the other posts I’ve missed of yours ?

      1. There is no doubt! Soup is wonderful – I used to find I could get my children to eat pretty much anything if it was soup-ed!

  2. Ahhh sweetie, I bet 90% of my cooking is pantry and freezer raiding, lolol! I make a similar soup but add spinach for some greens. Not sure if that will pass the kid test though, ha!

  3. Thank you for posting this recipe; you came to my rescue the other night! Lol I couldn’t find anything to make for dinner. I didn’t have everything I needed to make your jambalaya-which btw has become a regular staple around her-but I pulled up your blog and bam here was my answer:) This soup was simple and delicious, and best of all includes everything I usually have on hand-yay?
