Loving Lately #1: Oatmeal Cookies

A few of you may be aware that I have been searching for the perfect chewy oatmeal cookie. And the truth is I have been hoping to discover something amazing that has been hidden and that I could reveal to the world, as if the oatmeal cookie wheel hadn’t been invented. Then my good friend Molly came over to my house bearing the best kind of gifts, food. She brought the softest, chewiest, yummiest perfect little oatmeal cookies. Knowing what a talented baker she is, I asked her excitedly, “Molly did you come up with this recipe?” To which she replied “it came from the back of my Quaker Oats.” Of course it did, not sure why I hadn’t thought of that. My apologies and sincere thanks to Quaker Oats for letting me using their Vanishing Oatmeal Cookie recipe with my other brand organic rolled oats.

INGREDIENTS:
1/2 Cup(s) (1 stick) plus 6 tablespoons butter, softened
3/4 Cup(s) firmly packed brown sugar
1/2 Cup(s) granulated sugar
2 Eggs
1 Teaspoon(s) vanilla
1-1/2 Cup(s) all-purpose flour
1 Teaspoon(s) Baking Soda
1 Teaspoon(s) ground cinnamon
1/2 Teaspoon(s) salt (optional)
3 Cup(s) Quaker® Oats (quick or old fashioned, uncooked)
1 Cup(s) raisins

PREPARATION:
Heat oven to 350°F. In large bowl, beat butter and sugars on medium speed of electric mixer until creamy. Add eggs and vanilla; beat well. Add combined flour, baking soda, cinnamon and salt; mix well. Add oats and raisins; mix well. Drop dough by rounded tablespoonfuls onto ungreased cookie sheets. Bake 8 to 10 minutes or until light golden brown. Cool 1 minute on cookie sheets; remove to wire rack. Cool completely. Store tightly covered.

Serving Tips: Bar Cookies: Press dough onto bottom of ungreased 13 x 9-inch baking pan. Bake 30 to 35 minutes or until light golden brown. Cool completely in pan on wire rack. Cut into bars. Store tightly covered. 24 BARS. VARIATIONS: Stir in 1 cup chopped nuts. Substitute 1 cup semisweet chocolate chips or candy-coated chocolate pieces for raisins; omit cinnamon. Substitute 1 cup diced dried mixed fruit. HIGH ALTITUDE ADJUSTMENT: Increase flour to 1-3/4 cups and bake as directed.

Molly didn’t even put raisins in hers, and they were great. And to those of you who sent me more oatmeal cookie recipes to try, I can’t wait to make them too. I think I just like oatmeal cookies.

I have been wanting to do a giveaway for a while. Actually before I ever had a blog I was planning the type of things I’d like to giveaway. Now that I have been doing this for a for a little span, I think its time. I just can’t wait any more!! Thankfully my favorite non-familial home cook has put out a really adorable kitchen ware line! Yay! I think it’s befitting that my first giveaway is a piece from her new line, don’t you? I recently visited my local Walmart to check out the new items and basically wanted to take home one of everything. The practical side of me made, um, me limit myself to a few. I have to say my favorite is this beautiful pitcher!

Loving Lately #1: Pioneer Woman Dishes

Here it is again in case you wanted to see it!

I really thought I was going to the store to pick out some of the those cute Pioneer Woman polk-a-dot glass bowls and cups, and maybe one day I will. But when I saw everything in person, I fell in love with the really sweet floral patterns.

To commemorate my 5 month achievement, thank my loyal followers and celebrate these cute dishes; my first giveaway is The Pioneer Woman Pitcher! I love this time of year. I love all year round really. But there is something invigorating about the cool air, the bright hints of color starting to flare out from the trees and the heart warming aromas coming out of my kitchen. They inspire me to decorate my nest! Every season I try to put out seasonal touches, I think it’s good for the kids…

Loving Lately #2: Naomi’s Outfits

Every day my daughter picks out her outfits, usually accentuated by a head band and possible bracelets; occasionally a necklace and hand bag. Honestly, I am always so surprised at her creativity, a fashionista in the making. She doesn’t forget anything, and can give thought out reasons for her selected options. I don’t know where she gets it, not from me. I’m a copy the mannequin type; but I can appreciate it when I see it.

Loving Lately #1: Grilling Outdoors

I know the official BBQ season is all summer long. And I really do enjoy all of the hamburgers and hot dogs, etc. But there is something about grilling when it’s not ridiculously hot out that makes it so much more fun! These cool evenings are amazing, such a beautiful reminder of how good life can be! I love grilling! (A new hobby I picked up this year) And I really love grilling on cooler evenings, while the sun is still out and the breeze blows the smell of BBQ everywhere. It’s like the best ever.

Loving Lately #2: Molded Bakeware

Do you see what I tried to do there? Anyway, I am gaga over shaped ‘tins’. I haven’t even scratched the surface of my molded bakeware stockpile. Nordic Ware is where it’s at. And rightfully so! They make everything look like a piece of art. Any cake or bread baked in these and served on any table or given as a gift is an instant winner. If it tastes half decent but comes out of one of these in a perfect shape, then you have succeeded. It does the work for you. Does Nordic Ware sponsor? How can I sign up for that?

Loving Lately #1: Nike Free 4.0 Flyknit

The concept of “barefoot shoes” has been around for a while; the idea that you want to feel as if you are not wearing a shoe. Except if you’re like me (and many others) you still want protection from rugged terrain- and pebbles. In my first edition of Loving Lately you saw my love of a “barefoot” sandal from Exodus. I really think I’ve become a minimalist in shoe wear since having children. I want something light weight, supportive and secure (the last thing I need while carrying a baby (and at least 2-3 bags at any given time) is a tripping hazard…) I’m more of a walker than a runner. But that won’t deter me from getting a “running” shoe. These are comfortable and cute, great to accompany jeans and an active wear, and perfect for around town from the post office to the grocery store and everywhere in between.

Loving Lately #2

A couple years ago we took a trip to Louisville, Kentucky. We have some great friends that live in Kentucky who recommended a trendy café called Please and Thank You. One of the most difficult things about traveling for me is finding places to eat that uphold our ethics when it comes to food. We really try to avoid genetically modified ingredients wherever possible. (Shout out to Chipotle, thank you for making strides in the fast food business!) Please and Thank You had some organic options and they served coffee from a local Louisville roaster, Argo Sons Coffee. As a souvenir I picked us this classic diner style coffee mug. Because I choose to use a dishwasher rather than wash it by hand, it is losing it’s print. So be it. But to preserve my fond memories, I am showing my love (of coffee, traveling and American nostalgia).

Loving Lately #1: Back to School Hairdo’s and Clothes

How cute are all of these back-to-school pictures on Facebook? All those sweet little faces headed off to face the challenges of the day, fill their heads with letters and numbers, and socialize with their peers! (I saw a few pretty cute homeschoolers out there too!) Isaiah has had surfer dude or skater dude hair for a long while. So when he decided to go short like “Captain America hair,” it was such a fun change. I haven’t seen him with hair that short since he was a toddler! Momma loves her boy!

If you know anything about me, you have an idea that I am a kitchen ware and utensil fanatic. I’m crazy about the stuff. And there must be a lot of us out there because it’s everywhere! (Has anyone gotten anything from Pioneer Woman’s new line? …I’m just waiting for an excuse, like in celebration of the next pay day?) Anyway I saw these spoons at Homegoods the other day. And they say cocktail spoons, which is all fine and dandy, but how cute are they going to be when I serve them with aside a latte?  (Note to self learn how to make a real latte.)

Loving Lately #1: My Local Farmer’s Market

I think it is vital to support your local farmer’s market. Buying organic produce is ideal, but don’t count it out if they don’t proclaim to sell organic goods. Talk to them, ask questions. Many vendors aren’t “organic” but still have much healthier practices than produce you can buy at your local grocers and their goods are likely much higher in nutritional value! Here is a list from the Michigan State University Extension of the top seven reasons to buy from your nearest farmer:
• Locally grown food is full of flavor. When grown locally, the crops are picked at their peak of ripeness versus being harvested early in order to be shipped and distributed to your local retail store. Many times produce at local markets has been picked within 24 hours of your purchase.
• Eating local food is eating seasonally. Even though we wish strawberries were grown year round in Michigan, the best time to eat them is when they can be purchased directly from a local grower. They are full of flavor and taste better than the ones available in the winter that have traveled thousands of miles and picked before they were ripe.
• Local food has more nutrients. Local food has a shorter time between harvest and your table, and it is less likely that the nutrient value has decreased. Food imported from far-away states and countries is often older, has traveled and sits in distribution centers before it gets to your store.
• Local food supports the local economy. The money that is spent with local farmers and growers all stays close to home and is reinvested with businesses and services in your community.
• Local food benefits the environment. By purchasing locally grown foods you help maintain farmland and green and/or open space in your community.
• Local foods promote a safer food supply. The more steps there are between you and your food’s source the more chances there are for contamination. Food grown in distant locations has the potential for food safety issues at harvesting, washing, shipping and distribution.
• Local growers can tell you how the food was grown. You can ask what practices they use to raise and harvest the crops. When you know where your food comes from and who grew it, you know a lot more about that food.

Loving Lately #2: Cute Drinking Glasses

I have a problem not buying kitchen gadgets and ware. I realize that it’s more Martha Stewart than “chef” in general, but I can’t help it, I love the stuff. I like juice in juice glasses and milk in milk glasses… And I already admitted it was a problem. How adorable are these? (I wish the cow would have shown up better so you could see it more clearly.) The best part was I got them at Homegoods for $1 each, which is practically like buying them at garage sale prices! Right? At least that’s how I justify it to myself. (My husband is awesome in that department by the way, he never needs justification.)

And just look at these! The bee glasses are perfect for honey colored drinks like iced tea. I prefer mine unsweetened, but how much more adorable would it be if I actually sweetened the drink with honey? The whole thing is practically enough for me to want to have a bee themed party! Seriously, I need to think about that…

Easy apps could easily make a weekly appearance on Loving Lately. For someone who likes to entertain as much as I do, quick and simple appetizers are greatly appreciated. I always want to make my guests feel welcome, and obviously I love to feed anyone who comes through the door. I wish I was one of those people who always had a big pot of something cooking on the stove, but I’m not (yet). I can however offer you a good cup of coffee, and a tasty bite… usually containing cheese. (Have I mentioned my love of cheese?)

Loving Lately #1: Goat Cheese and Dill (pictured above)

This recipe is from The Pioneer Woman, and honestly I don’t think it could get any easier. If you can chop some dill and unwrap some cheese you’re set. I like to pair mine with toasted pita chips (more like crackers). It just seems Mediterranean doesn’t it? But I also like to give my guests some options. I already knew I like goat cheese, but I’m not usually a huge fan of dill. Until now! Something about it just works. You should give it a try.

Loving Lately #2: Cast Iron

I could actually make a whole blog post out of this alone. I can’t say enough about it. I love how it connects me to the past. I love the crust it gives my cornbread. I love the way it makes pineapple upside cake. I love that I can fry up sausage and get it crispy or how I can bake the same pan in the oven and make a giant cookie. I don’t think I would feel like a home cook without a cast iron fry pan. And camping certainly wouldn’t be nearly as fun. (By the way making biscuits over a campfire in a cast iron dutch oven is sheer joy! …for someone who enjoys those things.) If you don’t have any cast iron I urge you to try it. I am a huge advocate for eating well. I am not a dietician, and I certainly could practice more moderation, but I am whole-heartedly in agreement with trying to eat your vitamins, minerals, antioxidants, etc. through your food. I have said before, and I’ll say it again; I am a believer in eating organic and non GMO/GEI crazy food experiments. I understand it can be costly which is why I always say “as organic as possible,” because every bit is a step in the right direction.

I am also always interested about specific foods and they’re health benefits. Not too long ago, a fellow blogger wrote an interesting post on the benefits of parsley. I believe herbs (and spices) in general have health potentials we haven’t begun to fully understand. And when I see something as informational as this, I’ve got to pass it along!

Loving Lately #2: La Croix

Sometimes you just got to have some fizz in your drink and nothing else will do. Honestly diet drinks scare me. Fake sugar of any kind is linked to cancer and all sorts of other issues, and no joke I think it erases peoples’ brains. So, I try to avoid it. On the other hand too much sugar is a bad thing too. I personally don’t do well with big doses of sugar, and I certainly don’t need the extra calories. Enter La Croix, sparkling water but better! It’s just right. It’s flavored; it’s fizzy; it’s zero calories; it’s sodium free; it’s love. Currently my favorite flavor is Peach-Pear.

Loving Lately 1: Easy Apps – Roasted Garlic Onion Jam & Brie (Pictured above)

I love easy appetizers. Who doesn’t? The kind of things that are really easy to throw together that are still really delicious and special. I also love brie and impromptu gatherings. Years ago we were at a specialty foods store in a Northern suburb of Chicago, and they were offering samples of Stonewall Kitchen’s Roasted Garlic Onion Jam on brie. At that time I would have never thought to put the two together. Now it’s hard to imagine them apart. (Don’t knock it until you try it.) I have also seen the Stonewall Kitchen line of products at Macy’s and Kroger.

Tara is a friend like a sister. She is worth her weight in gold, especially when it comes to child care. I think she takes more safety precautions with my children than I do (that’s saying something). She also does Sunday school lessons for our church. And she happens to make really cute projects to help the kids remember the teachings.
